For the month of December I have decided to challenge myself to eat a salad each day of the month. To me it doesn’t matter if it’s a salad of greens or a fruit salad the point is to just make sure I put healthy food into my body each day. I’ll update this post daily with a journal entry about what eating a salad each day is doing for my body, my skin, and my health. I hope to see improvements in each area of my life because of this but am fully prepared to not have any dramatic changes at all. Thank you for reading along on this journey.
Day 1 – December 1st
HOW I STARTED
For the first day of The Daily Salad Challenge I wanted to make sure I started out on the right foot by getting my salad in right away (for breakfast). While I’m normally a budget shopper and primarily purchase all of our groceries from Walmart I wanted to be sure I ate healthy options that weren’t treated with dozens of chemicals so I went to Publix to purchase all of the fruits and veggies for the week instead of my normal stop at Walmart. After that I came home and chopped spinach, lettuce, avocado, and prepped all of the salad greens into a bowl the night before so it would be ready and easy to go in the morning. In the morning I added Caesar dressing, cheese and some croutons as well.
HOW I FELT
Part of the reason I started the daily salad challenge is because I’ve been sick for an entire week. Stuffy nose, headaches, and just not feeling like myself. I’m also pregnant and don’t want to take anything that may harm the baby so I wanted to focus on food as my medicine. For day one of this challenge I’m honestly feeling pretty awful but ate the entire salad for breakfast and don’t feel heavy or lethargic because of it like I normally would feel with a breakfast including pancakes, bacon, biscuits or any heavier food options.
